Chicken Suqaar in less than 30 minutes, so easy to make and can be served with what ever you have, like rice, bread, lahooh, injera etc.
Ingredients:
- 1 pound chicken cube
- 1 squash/ zucchini, sliced
- 1 small onion, diced
- 1 teaspoon vinegar
- 1 teaspoon cumin
- 1 teaspoon chili powder
- Salt and pepper to taste
- 2 teaspoon oil
- 2 teaspoon lemon
- 1 teaspoon cilantro/coriander chopped
Directions:
- On a skillet brown the chicken with oil on high heat, season with salt and pepper, chili powder and cumin powder.
- Stir the onions until soft, add squash, lemon, vinegar and the cilantro/coriander .
- Continue stirring until the squash is tender don’t over cook it.
- Serve with rice, lahooh, sabaayad or bread.
