Delightful spicy chickpea in tomato sauce
Ingredients:
- 1 cup dried chickpea, soaked overnight
- 2 tomatoes, chopped
- 2 cloves of garlic, minced
- 1 tablespoon tomato paste
- 1 onion, chopped
- 2 tablespoon oil
- 1 tablespoon ginger
- Salt and pepper
- 1 teaspoon chili powder
- 2 tablespoon cilantro
- 2 teaspoon cumin powder
Directions:
Heat the oil in a pan and cook the onion on a medium heat until soft add the garlic and ginger, stir until fragrant.
Add the tomato paste stir few minutes, then add the tomatoes. cook until tomatoes are tender.
Stir chili powder, cumin, cilantro and season with salt and pepper. Cook for few more minutes then add the chickpeas, cover with water.
Continue to simmer on a low heat until chickpeas are tender.
How much ginger and cilantro? Also garlic stirs in first with the onion or after the tomato?

1 tablespoon of ginger, you can add garlic either way but I have added here after the onions are brown.
