Sweet coconut or qumbe macaan, no bake sweet treat, relatively easy to make and all you need is the stove top and the five ingredients.
Ingredients:
- 2 cups coconut, fresh or dried
- 14 oz can condensed milk
- 2 teaspoon cardamom, freshly grounded
- 1 tablespoon butter
- 1/4 cup sugar
Directions:
In a sauce pan place the coconut, condensed milk, and the sugar on a medium heat.
Stir constantly, making sure not to burn it for about 10 minutes until mixture thickens.
Mix in the butter and the cardamom powder.
Line a small pound cake pan with a parchment paper and spread the coconut sweets evenly and let it cool.
When cool cut them squares, diamonds or shape them into balls.
This looks very good. My father loves coconut, so may have to make some for a gift.
We ate at a small Somali restaurant in St.Cloud, MN (I think that’s where it was.) and the food was different from anything we’d tried before. But wonderful. Thanks for sharing your recipes.

I am making it right now. It is not cooled down yet. But the paste tastes really yummy. I wonder how many days you can store it. I like this recipe since it doesn’t ask for so much sugar.
