Egg Salad with mustard vinaigrette
Ingredients:
- 1 small head romaine, cut into bite size
- 1 carrot, grated
- 1 small onion, sliced
- 1 tomato, sliced
- 1 small cucumber, sliced
- 2 hard boiled eggs, sliced
Dressing:
- 2 tablespoons olive oil
- juice of one lemon
- 1 -2 teaspoon mustard
- 2 tablespoon vinegar
- Salt and pepper to taste
- 2 tablespoons yogurt
Directions:
In a bowl, mix the salad, tomatoes, carrot, cucumber, onions, and the eggs.
In a small bowl mix the vinaigrette ingredient until smooth.
Spoon dressing over salad and serve.
