Haricot beans cooked in a tomato sauce, flavored with garlic, chili peppers and cilantro. This is a healthy and delicious dish for breakfast or a light dinner when paired with a French bread.
Ingredients:
- 1 pound haricot beans
- 4 table spoon oil
- 1 red/green pepper
- 2 cloves of garlic, chopped
- 1 large onion chopped
- 1 (15-ounce) can chopped tomatoes
- 2 tablespoons tomato paste
- 2 teaspoon cayenne pepper
- ½ cup cilantro, chopped
- 1 Maggi bouillon
- Salt and pepper, to taste
Directions:
- Put the haricot beans in a bowl, cover with water and soak overnight.
Heat the oil in a large pan over medium heat and cook the onions until soft, add garlic and cook briefly season with salt and pepper. - Add the tomato paste, tomato, pepper and cayenne, cook for 5 minutes. Stir in the cilantro.
- Drain the beans and add to the pan with 3 cups of hot water and the Maggi.
- Bring it to a boil, cover and simmer for 1 to 1 ½ hours until the beans are tender, add more water if necessary.
