A delicious warm lentil soup it is great for the family, add more lemon juice or a dollop of yogurt and it is a wonderful when served with bread.
Ingredients:
- 3 potatoes, diced
- 2 carrots, chopped
- 1 small onion, chopped
- 1 small tomato, chopped
- 2 cloves of garlic, minced
- 1 cup lentil
- 1 Magi cube
- salt and pepper to taste
- 1 teaspoon cumin
- 1 teaspoon paprika/chili powder/
- 1 tablespoon chopped cilantro
Directions:
- In a sauce pan on a medium heat, add the lentil and cover with water.
- Bring it to a boil then simmer until the lentils are tender.
- On a sauce pan add the onions and cook until brown add the potato and the carrot.
- Cook for few minutes. Season with salt and pepper.
- Add the garlic, tomato, cilantro and cook until tomatoes are tender.
- Strir in the lentil, Maggi cube, cumin, paprika and cover with water.
- Cook until the potatoes and the carrots are tender, add more water if needed.
- Blend soup using a hand held blender or use a blender until pureed, or you can serve it as it is

This recipe is confusing and doesn’t include any spices other than salt, pepper and maggi. I went ahead and ‘winged’ it as I usually do w/ soups. The beef suuquar however was amazing.
