Maraq Fahfah is a lovely, hearty, warming soup that everyone adores. Pair it with rice, lahooh or bread. It is also good on its own. It is best when cooked with either lamb or goat meat.
Ingredient:
- 3 medium potatoes
- 2 carrots
- Half a head of cabbage
- 1 tomato, chopped
- 1 pound lamb/goat bone in
- 1 small onion, chopped
- 2 cloves of garlic, chopped
- 2 tablespoon cilantro, chopped
- Half of green pepper, chopped
- 2 green onions, chopped
- 2 teaspoon coriander powder
- 1 green chili, seeded
- Juice of half of a lemon
- Salt and pepper, to taste
Directions:
- In a large pot cook the beef and cover with water until the meat is tender.
- Add the potatoes, carrots and the cabbage and cook for 10-15 minutes.
- Add the rest of the vegetables and season with salt and pepper.
Cook until the vegetables are tender
