Ingredients
- 2 tablespoons oil
- 1 Onion,chopped
- 3 Garlic cloves, chopped
- 1 cup chopped green onion
- 500 g okra, ends trimmed
- 6 Cups broth
- 1/4 Cup green coriander, chopped
- Salt and pepper
- 1 lemon juice
Instructions
- In a saucepan heat the oil over medium heat.
- Add the onions and garlic, stirring cook about 5 minutes.
- Add the green onions and okra, and stir.
- Add the broth, lemon juice and salt and pepper.
- Bring it to a boil, reduce heat and cook for 30 minutes covered .
- Add cilantro and mix in.
- In a blender or hand blender blend the mixture until smooth.
- Serve warm
